Farmers Daughters Collins Street
Melbourne, VICA multi-level hospitality destination at 95 Exhibition Street, designed to celebrate the 'paddock to plate' philosophy using Victoria's local produce. The project spans three distinct levels, each offering a unique experience while maintaining a cohesive narrative of theatre and immersion.
The Ground Level serves as a casual Deli, a lighter and more approachable starting point for the guest's journey. Custom banquettes work against the street frontage to add a sense of comfort and solidity, anchoring the space. Guests then move up to the Middle Level for a finer dining experience, centered around the heart of the space: an open kitchen featuring a custom charcoal fire pit, oven, and grill. We helped document and detail this centerpiece, along with the highly complex bars and open kitchens that seamlessly integrate stainless steel functionality with fine timber joinery.
The journey concludes at the Rooftop, a greenhouse bar area with a green wall, creating a lush, light-filled retreat for cocktails.
Project Insights: This project was a journey of intense collaboration and detail. Luke Hickman worked late nights with Chef Alejandro to squeeze every millimeter out of the plan. We produced detailed fabrication drawings for everything, including custom furniture sourced overseas. Key learnings include the necessity of working lock-in-step with the operations team and chef, engaging the shop fitter early, and detailing every joinery item to its fullest. It required grit and hard slog to pull off, but the multi-leveled approach and layering of functional and seating spaces made everything sing.
